Kali Mirch Tandoori Momos Recipe

Ingredients:

For the Momos:

  • 1 cup All-purpose flour (for the dough)

  • Water (as required to knead the dough)

  • Salt (to taste)

  • 200g Minced chicken or vegetables (for filling)

  • 1 tsp Ginger-garlic paste

  • 1 Onion, finely chopped

  • 1 tsp Soy sauce

  • 1/2 tsp Black pepper (Kali Mirch)

  • Oil (for greasing)

For the Marinade:

  • 1/2 cup Yogurt

  • 1 tbsp Ginger-garlic paste

  • 1 tbsp Tandoori masala

  • 1 tsp Kasuri methi (dried fenugreek leaves)

  • 1/2 tsp Garam masala

  • 1 tbsp Lemon juice

  • Salt to taste

  • 1 tsp Black pepper (Kali Mirch), freshly ground

  • 1 tbsp Mustard oil

Instructions:

Prepare the Dough:

  • In a mixing bowl, combine the all-purpose flour, salt, and gradually add water to knead into a soft dough. Cover and let it rest for about 30 minutes.

Prepare the Filling:

  • Mix the minced chicken or vegetables with ginger-garlic paste, chopped onion, soy sauce, and black pepper. Set aside.

Shape the Momos:

  • Divide the dough into small portions. Roll each portion into a thin circle.

  • Place a spoonful of filling in the center of each circle. Bring the edges together and pinch to seal, forming a momo. Repeat with the remaining dough and filling.

Marinate:

  • In a separate bowl, mix the yogurt, ginger-garlic paste, tandoori masala, kasuri methi, garam masala, lemon juice, salt, black pepper, and mustard oil to make the marinade.

  • Gently coat the prepared momos with the marinade. Let them sit for at least 30 minutes.

Cook the Momos:

  • Preheat your tandoor, oven, or grill to a medium-high heat.

  • Place the marinated momos on skewers, leaving some space between each.

  • Cook for about 10-15 minutes or until they are nicely charred and cooked through.

Serving:

  • Serve hot with mint chutney or any sauce of your choice.

Notes:

  • You can adjust the amount of black pepper in the recipe according to your taste preference.

  • For a vegetarian version, use finely chopped vegetables like cabbage, carrot, and bell pepper for the filling.
